Recipe 1: Crispy Oven Roasted Potatoes
Young cultivator happily sampled all 3 types of gem potato and a crispy chunk of parmesan. Verdict: they all taste the same. This made a hearty lunch for me as well. 1 lb vs. 1.5 lbs of potatoes is the right amount to fit on a quarter sheet. I swapped the garlic powder for 2 garlic cloves and probably could have gotten away with 1 clove. Next time, I'll add some rosemary.
Recipe #2 - 6 minute microwave
This is so simple, it feels like cheating to call it a recipe... I watched a fitness influencer on Youtube who was working the angle that potatoes are a super satiating carbohydrate and therefore featuring it heavily in her meal prep stack as insurance against binge eating. Previously, I passed on potatoes because we would invariably end up home and ravenous after a long string of extracurricular activities, feeling that a potato would take at least an hour of baking while ramen could be ready in minutes. Not so! You can microwave a potato in 6 minutes and it turns out great. This is an double win for me because my oven (actually a convection oven-microwave situation) heating elements seem to be on their last legs, dramatically scaling back the baking projects for now.
